Beach pavilions are smart with waste: coffee grounds come back as a croquette

Growing oyster mushrooms on coffee grounds which you use for croquettes that your guests can eat at your restaurant, the same restaurant they drink their coffee and create coffee grounds.

Coffee grounds, orange peels, crustaceans and shellfish, and other food residues. Six beach pavilions in Schouwen-Duiveland have 75,000 kg of this waste annually. Now they are looking into circular ways to reduce and recycle their waste.
